Wheat Thin Chicken
Yesterday I bought some thin sliced chicken breasts and planned on making some Chicken Parmesan. Unfortunately, I forgot to buy bread crumbs so I had to scratch that idea. After searching the web for ideas, I came across something that inspired me to use crackers I already had in my cupboard. I pulled out the box of wheat thins and decided to try something new. I made it like I would have made the chicken Parmesan only I used crackers instead of bread crumbs. All you need is chicken, eggs, Parmesan cheese and crackers. First I chopped the crackers in my mini Cuisinart.
Then I mixed the crushed crackers in with some Parmesan cheese. This recipe calls for grated Parmesan but I only had shaved..
Then I cracked 1 egg in a bowl and dipped my chicken breasts in it to coat them. I prefer using thin breasts but if you only have regular sized chicken breasts you can cut one in half lengthwise.
After they were nicely coated I dipped them in the cracker and cheese mixture. Be sure to coat them on both sides.
Then, place them in a baking dish and set the oven to 350 degrees. Bake uncovered for 30 minutes or until done. Serve with a salad or a side dish and your dinner is complete! My kids are really picky eaters and they ate every last piece of chicken. Including my 2 year old who hardly eats a thing.
