White Chocolate Macadamia Nut Pancake Recipe

One of my favorite things to do on the weekends is to cook breakfast for my family. I am currently in my second year at the Orange County School of the Arts Culinary and Hospitality high school where I have been expanding my passion for culinary arts. One of my mom’s favorite snacks is Mauna Loa Macadamia Nuts, so I surprised her over Thanksgiving break by making her white chocolate macadamia nut pancakes, and it was her favorite breakfast that I have made for her yet.
What got me inspired to make these pancakes was when I saw that Mauna Loa now makes chopped macadamia nuts, making it easier than ever to make baked goods with the delicious nuts. The recipe is super simple. You can use any basic pancake recipe (or mix – which I don’t recommend) and then blend in the white chocolate chips and chopped macadamia nuts. The recipe would not be complete without topping the pancakes with whipped cream and extra macadamia nuts. You’ll enjoy a taste of the tropics while savoring this tasty breakfast dish.
White Chocolate Macadamia Nut Pancakes
Ingredients:
2 cups of flour
2 Tbl sugar
2 tea baking powder
1/2 tea baking soda
1/2 tea salt
1 egg
3 Tbl butter (melted)
2 tea vegetable oil
1/2 cup of white chocolate chips
1/2 cup of chopped macadamia nuts
Topping:
Whipped cream
Chopped macadamia nuts
Directions:
1. In a large mixing bowl, mix all the ingredients together.
2. Heat a non-stick skillet and coat with cooking spray.
3. Pour the batter in the size of small circles.
4. Cook for 1-2 minutes on each side and then serve with whipped cream + macadamia nuts.
